Tea flavoring – in ice cream, cakes and cookies

Most people are familiar with different ways to change and enhance the flavor of tea. With the addition of fruit, different kinds of sweeteners, herbs and spices and milk it is possible to create a huge variety of tea taste experiences. Tea can also be used, however, to flavor other foods too. It can add an unusual and unique flavor note to otherwise common, everyday dishes.
Tea flavored ice cream? 
Tea can be used to flavor ice cream. There is hardly a person around who doesn’t like ice cream. Such flavors as green tea ice cream have become surprisingly popular. It is possible, with a little know-how to re-create this unusual ice cream flavor for yourself. Most ice cream bases are some combination of milk, cream, sugar and a thickening agent such as cornstarch or egg yolks. To an ice cream base made of milk, cornstarch or egg yolks and sugar cooked on the stove a strong infusion of green or oolong tea can be added. The mixture is then frozen in an ice cream maker like any other kind of ice cream. Vanilla or ginger can be added to create a more complex flavor. Try this with any standard recipe for vanilla ice cream. Substitute some of the milk or cream called for in the recipe with the tea infusion.
Cakes and cookies with tea flavoring 
Tea can be used to flavor cakes and cookies. This can be accomplished in a number of ways. Dry or wet tea leaves themselves can be finely chopped and added to the batter like any other herb or spice. Or a strong brew of tea can be substituted for some of the liquid called for in the recipe. The tea flavor is especially successful with cakes such as pound cake, nut and fruit breads or sugar cookies and shorbread. With cookies the tea leaves can be creamed with the butter or the strong tea infusion can be used as flavoring instead of vanilla.
Tea flavored punch 
Tea can be used to flavor punches. Combine the strong brewed tea with ginger ale, lemon-lime soda or lemonade. Add fruit, fruit juice and sherbet or ice cream to create a refreshing punch for a party or wedding reception.
Just about anything that has spices and flavorings added is a candidate for experimentation. A little tea may be all that is needed to open up a whole new world of taste with vegetables, salads, pastas and rice dishes. Don’t be afraid to experiment. Start with a small amount and adjust it according to your taste preference. You may be surprised at the number of new flavors and tastes you are able to create. Have fun.
